A big congratulations to the below top 5 recipes that won in the August hamper give away!
The challege invited H.O.C firends to submit a sandwhich recipe using H.O.C pear flare chutney. The competition guidelines required submissions to require no more than 5 ingredients (exluding the chutney and bread), and should take no longer than 15mins to prepare (any meats, if used, are expected to be left overs/ pre-cooked/ cured, or otherwise purchasable at a deli counter). The sandwhich should ideally be something more exciting than the usual lunch box fillers, but should not be too complex either - perfect for the work from home lunches.
Although there were many variations of ham and cheese toasties submitted, the top winners were selected based on several other factors, such as simplicity in instruction and the overall cost efficiency (sorry, Julian from Camden; as delicious as your "salmon roe, duck confit and kimchi espuma" undoubtably is, there are too many kitchen gadgets and pricey ingredients required to meet the time preparation limit).
The final ranking of contenders were finalised by H.O.C staff based on aesthetics, and ranked using Boyle's method in Brooklyn99 (ie. flavour had to include aspects of "mouth feel" and texture over time as well). Thus, as follows:
- #5 - mozzarella and tomato in ciabatta, Ellen from Crayford
Slice ciabatta in half and spread green pesto on the bottom half and chutney on the top half. Place a bad of rocket and baby spinach, and top with alternating slices of sundried tomatoes and mozzarella. Can be eaten cold, but best served hot by pressing in a panini toaster on medium-high heat for 5-8mins.
- #4 - cucumber in sourdough, Catarina from Chelmsford
Mix 1tblspn cream cheese, 1tsp mint sauce and 1tsp chutney. Spread on plain sourdough (medium-thin sliced), and fill with slices of cucumber. Sprinkle some finely chopped green chili and fresh corriander on cumcumber and close sandwich. Best eaten immediately, or wrapped in cling film for no more than 12hrs in the fridge.
- #3 - salmon and beetroot in sesame bagel, John from London
Mix a tablespoon of chutney with cream cheese and spread on a slightly toasted bagel. Layer sandwhich with fine cut battons of beetroot, smoked salmon and top with a sunny side up fried egg.
- #2 - fried chicken in waffle, Jay from Croydon
Mix 1tblspn chutney with 2tsp brown sauce and 2tblspn mayonaise. Spread on plain egg waffles and fill with finely shredded cabbage and cold leftover crispy fried chicken.
- #1 - cauliflower in wholewheat, Larry from Portugal
Brush a cauliflower steak with the mix of 1tblspn olive oil, salt, pepper, 2tsp chutney and a pinch of turmeric. Grill for 15mins at 450, or air fry at 205 for 12mins. Place on a bed of bistro salad in a wholewheat toasted bun.
