A quick and easy sweet treat for those tea time cravings.
Makes 6large or 12small muffins
1 egg
200g self raising flour and 1 heaped teaspoon baking powder (or 200g plain and 3 level teaspoon baking powder)
100ml milk
100ml vegetable oil
6 level tablespoons HOC Fistfull of zest marmalade, and a little extra to brush on top
- Mix all the wet ingredients together well.
- Gently mix in the flour and baking powder, ensuring not to over-mix.
- Pour into muffin moulds, and bake in a preheated oven () for 15-20minutes. A skewer should come out clean when baked, and the top slightly springy to touch.
- Whilst the muffins are still warm, brush or spoon some H.O.C Fistfull of zest marmalade on top. Leave to cool completely before turning out.
- Serving suggestion: with butter and a cup of tea
