Citrus Muffins

A quick and easy sweet treat for those tea time cravings.

 

Makes 6large or 12small muffins


1 egg

200g self raising flour and 1 heaped teaspoon baking powder (or 200g plain and 3 level teaspoon baking powder)

100ml milk

100ml vegetable oil

6 level tablespoons HOC Fistfull of zest marmalade, and a little extra to brush on top


  1. Mix all the wet ingredients together well.
  2. Gently mix in the flour and baking powder, ensuring not to over-mix.
  3. Pour into muffin moulds, and bake in a preheated oven () for 15-20minutes. A skewer should come out clean when baked, and the top slightly springy to touch.
  4. Whilst the muffins are still warm, brush or spoon some H.O.C Fistfull of zest marmalade on top. Leave to cool completely before turning out.
  5. Serving suggestion: with butter and a cup of tea
