Why won't HouseOfChevy ever fulfill scones with Postage Confectionary Orders?
Because they are very simple to make and are always best served fresh!
450g self raising flour with additional 2tsp baking powder
50g sugar
100g soft butter
2eggs, beaten with enough milk to make 250ml. This is also used as the glaze
Rub the butter, flour and sugar together until like fine breadcrumbs.
Pour in 200ml of the egg mixture, and knead gently to mix. Do not overmix and use a floured board if the mixture is too sticky.
Roll out until 2" thick, and use a flutted cookie cutter to make 8 large scones squashing offcuts together until all the dough is used.
Brush tops of scone with the left over egg mix.
Bake at 200C in a preheated fan oven for 15mins on a tray lined with baking paper.
Leave to cool before serving plain or (the ELITE OPTION), with clotted cream and then jam.
VARIATIONS: add the following alternatives before adding the egg and mixing
Fruit - a handful of dried fruit. Fresh fruit (eg. blueberries) are best coated in flour and sandwhiched between kneaded scone dough layers (roll out 1" thick) before using the cookie cutter
Maple and pecan - handful of chopped pecans and 1tblspn maple syrup
Ginger - 3tblspns of chopped crystalised ginger and 1tsp all spice
